10-Minute Sugar-Free Chocolate Chip Pancakes in Only 10 Minutes!


As for me and my house, we will serve breakfast-for-dinner (or "brinner"). Brinner, a fine Southern tradition nearly as true to Dixie as taking credit for fine traditions, has become the dinner of choice for my family (me, my wife, and our 54 couch pillows).


Breakfast foods are easy to adjust based on your personal taste, so whether you're trying to get enough protein, lose a few lbs., or carb up for a weekend 5k, you can easily build a breakfast to suit.


We're going for a lower-carb brinner tonight, but all 56 of us were craving pancakes so we adjusted on the fly with Carbquik and low-cal Heavy Cream, added some sugar-free chocolate chips, and snagged some Ms. Butterworth's sugar-free syrup (the NON-racist light syrup). We're not reinventing the wheel here, we're just putting a Paul Walker tire on it.

MIX EM UP

Mix all ingredients into bowl. Try to pour the ingredients separately so you can take a better picture for your recipe blog than mine. Whisk everything together for a minute or two, until it's a smooth batter. If you're not familiar with the general consistency of pancake batter, shoot an email to robbie@unclebod.com and I'll recommend 3-4 IHOP locations in your area. Just tell 'em Uncle Robbie sent ya; they'll be very confused.

 

GRIDDLE ME TIMBERS

Pre-heat the stovetop or an electric skillet to medium heat. Spray the surface with cooking oil, then pour the batter evenly into whatever size pancakes you're comfortable flipping. **NOTE - nobody over 8 yrs old will be impressed you can make a huge pancake the size of the whole pan... especially when it's all cracked and jammed back together like Pankenstein.


Once you've poured the batter onto the hot surface, you'll wanna wait about 2 minutes before flipping. The edges should be bubbling up and the spatula should fit underneath without all the ripping and the tearing. Flip once, allowing them to cook for 2 more minutes, then remove from heat and enjoy. Welp, see ya later!
